warm chili on a rainy day

i made an amazing vegetarian chili the other day, probably better than any chili i’ve had before meat or no meat. it was glorious and even better the next day.  this recipe is hard to mess up, whatever veggie you like, throw them in, what spices you like, throw those in. it’s one of those great meals you can clean your pantry and crisper with.


it was insanely easy to make to, basically anything i had laying around, i threw right in there and let it simmered. you can add any type of beans or veggie that you want. the more the merrier.

heres what i did:

makes four servings.

-sauté onion in a large pot with garlic and olive oil
-add two cans of beans (romano and white kidney)
-add a couple splashes of tomato sauce (this is preference of how wet you like it)
-three medium tomatoes diced
-one handful of chopped red and orange pepper
-one zuchinni peeled and chopped
-one medium carrot diced
-2 tsp of garlic powder
-1 tsp of chili powder
-1 tbsp of onion powder
-pinch of ground pepper
-as much hot sauce as you can handle
cover and let simmer for 10-15 minutes, stirring occasionally.
-one large handful of spinach
-one  handful of chopped mushrooms
cover and let simmer.

i added cheese to the top and a dollop of sour cream cant hurt either
sit and enjoy!
